these nipples seamless or are they welded? trying to figure out if they'll hold up in a hydraulic line that runs pretty hot and stays pressurized all day long

Seamless construction all the way through. No weld seam means a more uniform wall thickness and better resistance to stress under sustained pressure and heat. Schedule 80 wall thickness is considerably heavier than standard Schedule 40, which is exactly why it gets chosen for demanding industrial setups where pressure and temperature don't let up.

What's the deal with "schedule 80?" Does that mean it's extra strong or somethin'?

Schedule 80 refers to the wall thickness of the pipe nipple; it's thicker than Schedule 40, so yes, it's designed to handle higher pressures.
