Will this here valve work okay on a log splitter? I'm pushing about 2800 PSI through it.

This valve is rated up to 5000 PSI, but keep in mind that if you're going over 3000 PSI, you'll need to use a steel housing or manifold with it.

got a question on how this one acts, is it open unless you power it up or the other way around?

De-energized, it is normally open and will pass flow either direction through the cartridge. When you energize the solenoid, it shifts to block flow in both directions.

runs at 5000 psi but my setup's got a cast housing right now, that gonna be a problem?

At pressures above 3000 PSI, a steel housing or manifold is required. Cast housings are not rated for the upper end of this valve's pressure range. If you're running anywhere near that 5000 PSI ceiling, you'll need to swap to a steel housing before putting this cartridge in service. The valve itself is rated for 5000 PSI, but what it's threaded into has to be up to that same standard.
