what exactly does this retaining ring do inside one of them Adaptall assemblies? trying to understand if it's a structural piece or just a spacer

Structural is the right word for it. The retaining ring sits inside the adapter body and holds the sealing or mating elements in place so the assembly stays together under working conditions. Without it, those internal components wouldn't have anything keeping them secured in position. It's not a spacer in the traditional sense, it's there to maintain the integrity of the whole adapter assembly during use.
