so once i lift with it, can i back the pressure off and it’ll still hold where i left it?

With the locking collar nut engaged, the load is supported mechanically so you can release hydraulic pressure and still keep the load held in position. That setup is meant for jobs where you need the lift held for a while, like maintenance or positioning work.
