hollow plunger on this one, does that mean I can run a bolt or rod straight through the middle of it while it's under load?

That's what the hollow center is for. The through-hole design lets you pass a bolt, rod, or stud straight through the plunger while the cylinder is applying force. That's what makes it useful for bolt tensioning and alignment jobs where a standard solid-ram cylinder just won't work. The hydraulic pressure extends the plunger outward, so as long as your setup accounts for spring or mechanical load handling the retraction, you're good to go.

need a cylinder for pull-through work and some bolt tensioning. is this the hollow ram style for that?

For pull-through jobs, bolt tensioning, and alignment work, the hollow plunger on this Enerpac cylinder is the whole point. The center hole lets you run a rod, cable, or threaded stud through the ram, which you cannot do with a solid-ram cylinder.
