this valve say it's non-adjustable, does that mean there's no way to tune the pressure or flow once it's installed?

Correct, once it's in place, what you get is what you get. No adjustment points, no set screws, nothing to dial in after the fact. For applications where a fixed, consistent response is what you need, that's actually an advantage. Fewer moving parts to mess with means less that can drift out of spec over time.

got a Cross valve marked 127120 on the old machine, is RC12DD the same part or am i mixing things up

Both numbers point to the same Cross Manufacturing valve. RC12DD is the supplier part number, and 127120 is listed as an alternate part number for the same Cross Valve #127120.
