does this valve come with the housing or do I need to order that separate

The cartridge is sold on its own. You'll need to order the housing separately, and it takes a C-10-3 cavity size. Just make sure whatever manifold or block you're using has that cavity machined in, otherwise the cartridge won't have anything to thread into.

Will this valve hold up in a hydraulic system running around 2000 PSI pretty consistently?

It should. This valve has a pressure rating of 2400 PSI on all ports, so running at 2000 PSI should be within its safe operating range.
