max operating pressure on this one is listed at 100 bar, but I saw something about Series S going up to 630, which number actually applies to this fitting?

The Series S range of 160 to 630 bar applies to a different configuration within the broader product family, not to this LL series ring. So for your application planning, 100 bar is the number to work with here.
