Will this fitting work with standard black iron pipe?

It’s made to American Briggs standards for pipe threads, so it should be compatible with other fittings made to the same standard.

these threads, do they follow standard pipe thread sizing or is there something proprietary going on with this fitting?

American Briggs Standard is what this union is threaded to, which lines up with standard NPT pipe thread sizing used across the industry. Nothing proprietary here. It'll mate up with standard 1/2 inch pipe threads the same way you'd expect any quality fitting to.

got a 1/2 inch black pipe run i need to break apart later, is this the right kind of fitting for that?

A union is meant for exactly that situation. It gives you a disconnect point in a 1/2 inch threaded line so you can take the run apart and put it back together without having to spin the whole pipe assembly.
