hose says it's rated down to -40 degrees -- does that mean it'll hold up running hydraulic oil in real cold weather without getting stiff and cracking on me?

Cold weather performance is one of the stronger points of this hose. The nitrile inner tube handles petroleum-based hydraulic oils well, and the -40 degree minimum working temperature means it stays functional in pretty serious winter conditions without the tube getting brittle or the cover cracking up on you. The neoprene outer cover holds up too, so you're not looking at a hose that's going to give you trouble just because temps dropped overnight.

got a tight spot to snake this hose through. what’s the minimum bend radius on the H104 -8?

For the -8 dash size H104, the minimum bend radius is 7 inches, so you will want to keep your routing at or above that to avoid kinking or stressing the hose.
