setting gets bumped sometimes on our lines and we lose the flow adjustment we had dialed in, does this valve have any way to hold its position?

Yeah, there's a set screw built in specifically for that. Once you get the flow where you want it, you lock it down and it stays put even with vibration or accidental contact. The knob itself is metal, so it holds up better than plastic alternatives under regular shop conditions.

Will this needle valve work okay with a pneumatic system?

These brass valves are indeed suitable for pneumatic systems, as well as lower pressure hydraulic systems. It's designed to provide controlled flow in both directions, so you can adjust the flow under pressure and lock the setting with the set screw.
