what's the max torque you can put on this clamp without stripping it out?

Thirty inch-pounds is the recommended max torque on this one. The screw is SAE 410 stainless, which holds up well, but staying at or under that limit keeps you from warping the housing or chewing up the slot over time.

Will this clamp work on a hose with an outer diameter of 0.6 inches?

This clamp is designed to fit hoses with outer diameters ranging from 0.44 inches to 0.78 inches, so it should work well for a 0.6-inch hose.

got a hose that measures right around 1/2 inch on the outside. is this clamp in the right range or am i pushing it

Fit comes down to the outside diameter of what you are clamping. This HSS6 clamp tightens from 0.4375 inch up to 0.7813 inch diameter, so an OD around 0.50 inch sits comfortably inside its adjustment range.
