Running stainless steel couplings on some chemical transfer lines and need to know what seal options come standard with this one. What does it ship with and what temperature range am I working with?

Buna-N is the standard seal material on this coupling, which covers a range of -40°F up to +250°F. If that range doesn't fit your application, the HK Series is also available with EPR and Viton seals. Viton (FKM C) handles the widest temperature swing, rated from -15°F all the way up to +400°F, so if you're running hotter fluids or more aggressive chemicals that's the direction to look. EPDM goes from -65°F to +300°F and Neoprene covers -65°F to +212°F on the cold end.

trying to swap out an old Series B coupler, is this one the stainless female half with a 3/8-18 female NPT port?

It is the HK Series Industrial Interchange (ISO 7241/1 Series B) female half, and the threaded port is 3/8-18 female NPTF. The coupling size is -06.
