got a -08 hose setup already, does this plug end match up with the ISO 7241-1 Series B stuff?

For interchange fit, it’s built to meet ISO 7241-1 Series B dimensional requirements and it’s a -08 coupling size, so it’s intended to mate within that Industrial Interchange Series B style.

Buna-N seals are standard, good for general use. But you've also got options like PTFE, Neoprene, FKM, EPDM, and Kalrez if you need something more specialized for different fluids or temps.

What kind of seal does this coupling come with standard, and can it handle something like hydraulic oil or maybe some chemical fluids if I swap the seal out?

Buna-N is the standard seal, which covers most hydraulic oils and general fluid transfer work just fine. If you're running something more aggressive like certain chemicals or need higher heat tolerance, there are other seal options available: PTFE, Neoprene, FKM, EPDM, and Kalrez. FKM pushes the upper temp limit all the way to 400 degrees F, so that's the go-to for hotter or more chemically demanding setups. Just make sure you match the seal material to whatever fluid you're running.
