what seal options come with this thing, and can I swap 'em out for something that handles higher temps?

Buna-N is the standard seal that ships with it, rated from -40°F up to 250°F. If your application runs hotter than that, FKM seals are available as an option and push the upper limit to 400°F. There are also PTFE, Neoprene, EPDM, and Kalrez options depending on what fluids or temperatures you're working with. EPDM tops out around 300°F, and Neoprene is good down to -65°F but only up to 212°F on the high end.

got a 1/2-14 female npt port here. is this the right female half to screw in, and what size coupling is it

The threaded end on this female half is 1/2-14 female NPTF, and the coupling size is -08. It is the socket side (female half) in the HK Series Industrial Interchange, ISO 7241-1 Series B style.

Will this here fitting work alright with hydraulic fluid, or is it more for somethin' else?

This quick disconnect is well-suited for hydraulic fluid, thanks to its brass construction and stainless steel springs which offer good corrosion resistance and fluid compatibility.
