what seal material comes standard on this coupling, and is it gonna hold up runnin hydraulic fluid in cold weather?

Buna-N is the standard seal on this one, and it covers a range of -40°F up to +250°F. For most hydraulic fluid applications in cold operating conditions, that range holds up well. If your setup pushes past those limits in either direction, there are alternative seal options available including PTFE, Neoprene, FKM, EPDM, and Kalrez, each rated for different temperature windows depending on what your system demands.

got an old Series B coupler on a hose, is this the right female half if i need a -12 with 3/4-14 female pipe threads?

Match-up comes down to two things here: it is a Series B (ISO 7241-1 Series B) female socket, and the threaded end is 3/4-14 NPTF female. It is also a -12 coupling size, with a female push-to-connect end on the mating side.
