got a high-pressure power unit that runs 10,000 psi. is this hose assembly actually rated for that, and what’s the burst pressure?

For pressure limits, it is rated for 10,000 psi maximum operating pressure, with a 20,000 psi burst pressure.

Running a setup that needs 10,000 PSI and I keep burning through hoses. This one rated to handle that pressure continuous, or just as a peak?

10,000 PSI is the rated operating pressure on this hose, not a peak or surge figure. The two braids of high tensile steel wire handle that load as the working rating. Burst pressure sits at 20,000 PSI, so there's a full 2:1 safety margin built in. For demanding hydraulic systems running at that pressure range, this is exactly the kind of hose it's built around.
