what's the pressure rating on the 1-inch size of this swivel joint, and is 3000 PSI enough for standard hydraulic lines?

For the 1-inch size, 3000 PSI is the rated working pressure. That covers a wide range of standard hydraulic circuit pressures without any issue. Worth noting, the smaller sizes in the FS65 series are rated higher, up to 5000 PSI for the 1/4 and 3/8 sizes and 3500 PSI for the 1/2 through 3/4 range, but for the 1-inch, 3000 PSI is the ceiling. If your system runs at or below that, you're in good shape.
