seals on this thing, what are my options if buna-n ain't gonna cut it for what I'm running?

Two other seal materials are available for this swivel joint. EPR is the suffix -04 option, and Viton is the suffix -06 option. Buna-N comes standard on the -01 suffix version. All three are rated down to -40 degrees C on the low end, so the cold side isn't where they differ. The choice really comes down to fluid compatibility with whatever media you're pushing through the line. A fluid compatibility reference document is available through Eaton's published resources if you need to cross-check a specific fluid against seal material.

Reckon this swivel joint will hold up alright for a hydraulic setup running around 3500 PSI? Don't want no leaks.

It's rated to handle 3500 PSI in the 1/2 and 5/8 sizes, so you should be good to go there, provided you're using the right size. Also, make sure you get the right seal material, depending on the fluid you are using. Buna-N is standard, but EPR or Viton are available if needed.
