trying to hook up a 2.5 inch female NPT line to a 2.5 inch male NST fitting, is that what this adapter does?

It bridges those two thread types in one piece, with a 2.5 inch FNPT connection on one side and a 2.5 inch MNST connection on the other.

What kind of connection does this adapter have on each end, and is it all brass throughout?

Both ends are brass, no mixed materials. One side is a 2.5 inch female NPT thread and the other is a 2.5 inch male straight thread. Dixon makes it as a full brass unit, so you're not dealing with any cast iron or aluminum in the body. Solid choice for jobs where corrosion is a concern.
