Does this adapter go from pipe thread on one end to a fire hose coupling on the other, or am I reading that wrong?

You're reading it right. One end is 1-1/2" FNPT, which is standard female pipe thread, and the other end is 1-1/2" MNST, which is Male National Standard Thread commonly used in hose coupling connections. got a setup that needs 1-1/2 female pipe thread on one side and 1-1/2 male standard thread on the other. is that what this adapter is?

Youre on the right track. This is a brass hex nipple with 1-1/2 inch FNPT on one end and 1-1/2 inch MNST on the other, meant to connect those two thread types together.
