fitting's got Dura-Kote plating on it, how well does that actually hold up in wet or corrosive conditions compared to standard carbon steel fittings?

Carbon steel on its own doesn't put up much of a fight against moisture and corrosion, but the Dura-Kote plating on this fitting is specifically there to change that equation. It gives the fitting a protective layer that standard uncoated carbon steel can't match, which makes it a better choice anywhere you're dealing with humidity, washdowns, or exposure to corrosive fluids. That's a big part of why Eaton Aeroquip built it into this line.

That's right, it's carbon steel. They use Dura-Kote plating to give it extra protection against rust and corrosion.
