does the dura-kote plating on this adapter hold up decent in wet or humid conditions, or is it more just a basic coating

Dura-Kote is specifically applied to give this adapter better corrosion resistance than a standard finish would provide. Carbon steel on its own is vulnerable in moist or chemically active environments, so the plating is doing real work here, not just cosmetic. It's one of the reasons Eaton uses it across their Aeroquip line for fittings that see tough service conditions.
