Will this adapter hold up to tough conditions if I'm using it offshore?

Dura-Kote plating gives this adapter excellent corrosion resistance, which is a big plus in marine and offshore environments. It's also made from carbon steel and can handle temperatures down to -65°F.

got a setup that needs a split flange on one end and a 37 degree male on the other, is that what this adapter is?

Built as a flanged to SAE 37 degree male 45 degree elbow adapter, it’s meant for exactly that kind of connection where you need a split flange interface on one side and a 37 degree male on the other.
