Does this adapter hold up in saltwater or wet marine environments, or is it gonna rust out on me after a season or two?

Corrosion resistance is handled by the Dura-Kote plating, which is specifically why this fitting gets used in marine and offshore drilling applications. Carbon steel on its own would be a concern in those conditions, but the plating is what makes the difference here. It's rated for those environments right out of the box.

got a tight spot on a hose run. is this the 90 degree elbow that goes from an ORS male over to a 3/8 NPTF male?

For making a right angle turn between two different thread styles, it fits that job. It is an ORS male to NPTF male 90° elbow adapter, with End Size 1 listed as 0.8125 on the ORS side and End Size 2 listed as 0.375 on the NPTF side.

Will this Eaton adapter work with standard NPT fittings, or is there somethin' special I need to know?

It's designed with an NPTF (National Pipe Taper Fuel) end, which is compatible with standard NPT fittings but provides a tighter seal, especially important in hydraulic applications. Just make sure your mating part is also NPT or NPTF.
