Wondering if this adapter would work to hook up a pressure gauge to a hydraulic line?

This adapter is designed to connect an 11/16-16 Female O-Ring Face Seal to a 9/16-18 Male JIC 37-degree Flare, so as long as your pressure gauge and hydraulic line match those specs, it should work just fine.

thread sizes on this one got me second-guessin myself -- is the female end an 11/16-16 and the male side a 9/16-18 JIC?

You've got it right. The female end is an 11/16-16 O-Ring Face Seal and the male end is a 9/16-18 JIC with a 37-degree flare. Both are straight through with no angle, so it drops right in wherever you need a direct ORFS-to-JIC transition without any offset.

trying to swap out a fitting, is this one female ORS on one end and male JIC on the other?

You are looking at a straight adapter that goes from an 11/16-16 female O-ring face seal connection to a 9/16-18 male JIC 37 degree flare connection.
