trying to swap out a fitting, is this one 3/8 pipe thread on one end and -6 hose on the other?

On end 1 you are getting a 3/8 inch male NPTF pipe thread, and end 2 is sized for a -6 hose dash connection. It is a fitting assembly made from carbon steel with Dura-Kote plating.

what's the thread size on the pipe end of this fitting, and is it a standard NPTF setup?

The pipe end runs 3/8 inch and yes, it's NPTF. That tapered thread design gives you a tighter mechanical seal than straight threads, which matters a lot when you're dealing with hydraulic pressure and don't want any seepage working its way out over time.
