Will this fitting work with a standard hydraulic hose? I'm not seeing anything about the type of hose it fits.

This Aeroquip fitting is designed for use with low-pressure hydraulic hose connections, specifically those in the Aeroquip Polyon series. It connects to a -2 dash size hose or tube end.
