got a nut stamped FC2875-12S, is this the same Aeroquip one or am i chasing the wrong part

Match it up by part number. FC2875-12S is the Eaton Aeroquip FC2875 series 3/4 flareless nut, and the alternates tied to it are C1CR43, MI-00305287, and MINO-00015F54206.

corrosion's always been a problem with the nuts we been running out in the field, does this one have any kind of protective coating on it?

Carbon steel with a zinc clear trivalent chromate finish is what you're getting here. Eaton calls it Dura-Kote plating, and it's built specifically to hold up better against rust and corrosion than a standard bare steel part would. For field use where moisture and grime are a constant issue, that finish makes a real difference over time.
