what's the pressure rating on these cups, and will they hold up in a system running close to 3000 PSI?

Rated for 0 to 3000 PSI, so running near the top of that range is within spec. The cotton fabric and rubber construction handles that load without issue in standard hydraulic piston applications. Just make sure your bore is a true 1.50 inch fit and you're in good shape.

What's the highest temperature this piston cup can handle?

This cup is rated to handle temperatures up to 220 degrees Fahrenheit, and as low as -65 degrees.
