This EK Series heat exchanger is rated for a maximum operating temperature of 250 degrees Fahrenheit.

Oil connections on this one are 1-1/2 NPT and water side is 3/4 NPT -- just want to make sure I got that right before I go cutting into my lines. That accurate?

Correct on both counts. Oil ports are 1-1/2 NPT and the water connections come in at 3/4 NPT. With oil flow capacity up to 80 GPM and those larger oil port sizes, entering and exiting flow restriction stays pretty minimal, which matters a lot when you're trying to keep pressure drop manageable in a working system.

got a hydraulic unit that runs pretty warm. what kind of flow and horsepower heat can this EK-712-T exchanger actually handle?

For performance, this 2-pass copper tube EK series unit is rated for heat removal up to 400 HP and it supports oil flow rates up to 80 GPM. It uses a high-efficiency finned bundle in a compact shell to pull heat out of the oil using water through the tube side.
