i keep seeing “no adjustable or calibrated parts” on this one, what does that mean for day to day use?

With no adjustable or calibrated parts, it’s meant to run the same way every time without you having to tweak settings or re-calibrate it. The tradeoff is you are not getting built-in adjustment features on the unit.

part number EHK00732-25HD, is that the same thing as the 2 X 25 CPLD HD, or are those two separate items?

Same product. The 2 X 25 CPLD HD is just the product name and EHK00732-25HD is the manufacturer part number assigned by HSC, which is the Hydraulic Supply Company division of Motion Industries.
