tubing says it goes down to -65°F but the working temp listed somewhere else shows -40 -- which one do I actually trust for air brake use?

The operational temperature range for this tubing runs from -65°F up to 200°F, so cold weather flexibility is built in at the material level. The -40 figure you're seeing refers to the minimum working temperature under pressurized service conditions, which is the more conservative rating you'd apply when the system is actively pressurized and cycling. For general installation and routing in cold climates, the tubing itself stays pliable well below -40. For a pressurized air brake system in regular use, plan around that -40 lower limit.
