trying to swap out a fitting, how do i tell if this one is the right size for my hose and threads?

Match three things: it is a straight E-Z Clip male insert fitting for -10 hose, the thread is 7/8-14, and the end type is SAE with a male insert O-ring seal. If your setup calls for a -10 A/C or refrigeration hose connection with 7/8-14 male threads and an O-ring seal, that lines up with this part.

Reckon this fitting will work with my existing Aeroquip hose, or is it made just for Danfoss stuff?

This fitting is part of the Eaton Aeroquip E-Z Clip series, so it's designed to work specifically with GH134 Multi-Refrigerant hose and other components within that system. Mixing with other brands could lead to leaks or other problems.

What all do I need to put one of these fittings together, and is there anything I absolutely can't skip during the install?

You'll need a few things on hand before you start: FT1357 Clip Closing Pliers, a guillotine blade or equivalent cutting tool, two appropriately sized clips and a cage, GH134 Multi-Refrigerant hose, and refrigerant oil that's compatible with your A/C or refrigeration system. The oiling step is the one you really can't skip. Before you push the nipple into the hose, you have to coat it with a generous amount of compressor oil from your system. Skipping that makes insertion way harder and risks damaging the assembly. Also, the two black o-rings already on the nipple are a specific rubber compound and size. Leave them alone. Don't remove them, don't swap them out.
