what's the deal with the o-rings on this nipple assembly, can I swap them out if they look worn?

Those two black o-rings on the nipple are not field-replaceable. They're a specific rubber compound and size chosen for the application, and pulling them off or swapping them with something else will compromise the integrity of the assembly. If the nipple looks worn or the o-rings are questionable, the right move is a fresh nipple assembly rather than trying to service those seals in place.
