Hey, will this here fitting work to connect a 3/4 inch stainless steel tube to a 1-1/16-12 male JIC flare?

Are these Duolok fittings actually interchangeable with Swagelok, or is that just marketing talk? I've got a system already built around Swagelok components and can't afford any leaks.

Fully interchangeable. SSP engineers and quality-controls these to match Swagelok tube fittings dimension for dimension, so swapping them into an existing system isn't a gamble. The double ferrule design works the same way, compensating for differences in tubing hardness and wall thickness to give you a leak-tight seat. If your current setup runs Swagelok, these drop right in without any rework.

got 3/4 inch stainless tubing, will this fitting actually bite and seal even if the tube wall is a little different than the last batch i used?

With Duolok’s double ferrule setup, the fitting is meant to handle normal variation in tubing material hardness and wall thickness and still pull up to a leak tight connection. It’s built for instrumentation and process tubing systems, and it’s rated to the maximum allowable working pressure of the tubing you’re using.
