hose is rated to 5000 PSI but I seen something about fittings dropping that down, what's the deal with that?

The 5000 PSI working pressure only holds when you're using Global fittings. Pair this hose with anything else and the rating drops to 4000 PSI. Same story with burst pressure, it's rated to 20000 PSI with Global fittings, but falls to 16000 PSI with other fitting types. Worth double-checking what you've got on hand before you build out an assembly.

Running a petroleum-based hydraulic system on some older equipment and need to know if this hose'll hold up to it. the pressure swings pretty good on startup. What's this rated for?

Petroleum-based fluid is exactly what this hose is built around. It's also rated for water-glycol base fluids and lubricating oils, so it covers the common hydraulic fluid types you'd run into on most older iron. Pressure-wise, it's rated up to 5000 PSI, which handles a good deal of startup surge in most standard hydraulic circuits. The cover is a PVC/nitrile blend, and the reinforcement is a two-ply wire braid, so it's got solid construction behind that pressure rating.

got a -6 hose on a piece of equipment here, is this the right size or am i mixin up the dash numbers with the actual inside diameter?

Dash size -6 on this hose corresponds to a 0.38 inch inside diameter. It is a 2-wire (2-ply braid) rubber hydraulic hose in the Eaton Aeroquip GH793 series.
