Can you actually see the fluid moving through this hose while it's running, or is the "clear" just kind of a marketing thing?

Clear PVC means you get a genuinely transparent wall, so yeah, you can watch the flow as it moves through. That visibility is useful for catching air pockets, blockages, or discoloration without having to shut anything down to inspect it. It's one of the more practical reasons folks reach for this type over an opaque hose.
