fitting says reusable, does that mean I can pull it off one hose and put it on another without buying anything extra?

That's what socketless reusable means. No socket, no crimping equipment needed. You can disassemble it from one hose and reassemble it on a replacement hose by hand with basic tools. Just make sure the new hose is a -08 size and cut it clean at 1.14 inches as the cutoff spec requires. The brass construction holds up well through multiple uses as long as the threads and seating surfaces aren't damaged during removal.

Will this fitting hold up ok if I'm usin' it for somethin' besides just hydraulics? Like, say, fuel or somethin'?

Match up the ends: it’s a straight brass socketless reusable fitting with a 1/2-14 male NPTF pipe thread on one side and an -08 hose connection on the other.

fitting says no thread sealant needed, that accurate for the NPT end too, or just the hose side?

Socketless fittings in this line are built so the male NPTF thread handles the seal on its own. The thread form is designed to create a pressure-tight mechanical connection without tape or compound. That goes for the 1/2-14 NPT end on this one. Just make sure your port threads are clean and in good condition before you run it up.
