What kind of pressure can this handle? I'm hooking it up to a sprayer.

Working pressure will depend on the hose itself, how many clamps you use and how tight they are, and even what you're spraying. Check your hose's pressure rating, and make sure your clamps are up to snuff.

fitting says 1-11-1/2 NPT thread, is that just a 1 inch male NPT or is that something different?

That thread spec refers to a 1 inch male NPT connection. The "11-1/2" part is the thread count, meaning 11.5 threads per inch, which is standard for 1 inch NPT. So on one end you've got a 1.25 inch barbed shank for the hose, and the other end threads into a standard 1 inch female NPT port. Pretty common pairing for this size range.
