Does this fitting work without tools, or do I need something to get the tubing locked in and back out again?

No tools needed for either end of the job. Push the tubing straight into the fitting and it seats and seals on its own. When you need to pull it back out, just press down on the collet ring and the tubing releases. Pretty straightforward once you do it the first time.

got some 1/4 inch nylon tube already, will this tee union fit it or is it picky?

For tubing, it’s meant for 0.25 inch tube OD and it’s compatible with PT230 and TP160 nylon tubing, plus PT240 polyethylene tubing.

Will this tee fitting hold up okay in a hydraulic setup with some decent pressure behind it?

This brass fitting is rated to handle pressures up to 250 psi, so it should work fine in many hydraulic applications. Make sure that the pressure in your system doesn't exceed that limit.
