Will this tee fitting work okay for hooking up some air lines in my shop?

This Eaton Aeroquip fitting is designed specifically for compressed pneumatic systems, so it should work well for your shop air lines, as long as they're using compatible tubing. It's rated up to 250 psi.

these push connect fittings work with regular polyethylene tubing or do they need something specific?

PT240 Polyethylene tubing is a confirmed match for this fitting, along with PT230 TP160 nylon and Viton is available by special order if your setup runs fluids that need broader chemical compatibility. Buna-N O-rings come standard and handle the sealing on most common pneumatic and instrumentation lines without any issues.
