What kind of tubing is this elbow fitting compatible with?

It's designed for use with PT230 TP160 nylon and PT240 polyethylene tubing.

fitting says it goes up to 250 psi, is that enough for a compressed air line running instrumentation equipment?

For most compressed air instrumentation setups, 250 psi is right in the wheelhouse. That upper limit applies depending on tube size, so just make sure the tubing you're pairing it with is rated to match. The fitting uses Buna-N O-ring seals and works across a temperature range of negative 40 to 200 degrees Fahrenheit, so a standard shop air instrumentation line isn't going to push it anywhere close to its limits under normal conditions.
