trying to hook 3/8 air brake tube to a 3/8-18 npt port, is this the right elbow for that

For that hookup, you’re in the right neighborhood. This fitting is made for 0.375 inch (3/8) tube OD on the push to connect side, and it threads into a 3/8-18 male NPT port, with a 45 degree elbow to help with alignment.

Does this fitting hold up alright in colder temps? We run equipment outside through the winter and need something that ain't gonna give us trouble when it gets real cold.

Rated from -40F all the way up to 200F, so winter conditions aren't going to be a problem. The EP O-ring and CA360 brass construction hold their seal through that full range, and the fitting is built to handle moderate vibration on top of that. As long as your application stays within those temperature bounds, you should be in good shape year-round.
