got a 5/16 tube on hand, will it actually fit this push connect end or am i asking for leaks

For this fitting you need 0.3125 inch tube O.D., which is 5/16 inch. It is a straight push to connect on the tube side, with a 1/4-18 male NPT thread on the other end, and it seals with a Buna-N O-ring (Viton is available on special order).

What kind of tubing is this fitting compatible with?

This fitting works with PT230 and TP160 nylon tubing, as well as PT240 polyethylene tubing.

fitting says it goes up to 200 degrees, we run coolant lines that can spike around 180F pretty regular, that gonna be a problem?

At 180F you've got a comfortable buffer before hitting the rated ceiling of 200F. The brass and nickel-plated construction holds up well through that kind of thermal cycling, and the Buna-N o-ring seal is suited for that range. Just keep in mind that if your lines ever creep closer to or past 200F on a consistent basis, you'd want to look at a Viton o-ring version, which is available on special order.
