fitting says it works up to 250 psi but does that hold across all tube sizes or does the rating change depending on what your running through it

Pressure capacity on push-connect fittings like this one does vary with tube size. The 250 psi figure is the upper ceiling of the rated range, not a flat guarantee across every configuration. Smaller tube sizes typically support lower working pressures, so if you're running close to that 250 psi mark, make sure your specific tube size falls within that tolerance before putting it into service.

What kind of tubing is compatible with this fitting?

This fitting works with PT230 and TP160 nylon tubing, as well as PT240 polyethylene tubing.

got a 5/32 nylon line, will it fit this push to connect or is it some oddball size?

It’s set up for 0.1563 inch tube O.D., which is the same as 5/32 inch tubing. It’s also called out as compatible with PT230 and TP160 nylon tubing, plus PT240 polyethylene.
