fitting's got a 1/4 NPT on one end and 5/8-18 SAE 45 flare on the other -- does that 45 degree angle on the elbow actually help with tight routing situations or is it more of a connection type thing?

Both, really. The 45 degree bend lets you redirect your line without forcing a sharp turn, which keeps stress off the tubing and makes routing in cramped spaces a whole lot cleaner. The SAE 45 flare end is the connection style, and the elbow angle works together with it so you're not fighting the geometry of wherever you're trying to run the line.
