Can this plug handle hydraulic systems okay, or is it more for lower pressure stuff?

It's rated for up to 150 PSI, which makes it suitable for many hydraulic, grease, refrigeration, and instrumentation systems. Keep in mind it's not for natural gas, LPG, nuclear, or aircraft applications.
