Will this plug work for natural gas lines, or is it just for hydraulic stuff?

It can be used for fuel, LP, and natural gas applications, but those are available as a special order item. Otherwise, it's good for grease, refrigeration, instrumentation, and hydraulic systems.

Got a grease fitting port on a hydraulic manifold I need to cap off. This the right plug for that kind of job?

Capping off a grease port is exactly the kind of application this plug handles. It runs a 1/8-27 male NPT thread, so as long as your port is a standard 1/8-27 female NPT, it'll seat right in there. No thread sealant comes pre-applied, so you'll want to add your own tape or compound based on what the system calls for.
