Will this plug hold up okay in a hydraulic system?

It's definitely made for that. This brass adapter is designed for use in hydraulic systems, along with refrigeration and instrumentation setups. You can even get it for fuel, LP, and natural gas systems on a special order basis.

got a port i need to cap off, is this plug just a straight 1/8-27 male NPT?

Thread-wise, it’s a 1/8-27 male NPT hex head plug, so it’s meant to screw into a female 1/8-27 NPT port to close it off.
